Very Easy Ginger Beer Recipe

EASY GINGER BEER - RECIPE No. 8

This recipe is adapted from one that Jackie French, well known Australian personality authored in the magazine “Burkes Back Yard” some years ago.  I love the way Jackie writes. It is always fun and down to earth. Terrific magazine for the do it yourselfers, pet lovers and growing anything from the ornamental to the useful. Really miss the show on television. I bought each of the annual editions of the cheat sheets they used to put out and they are referred to constantly. Self sufficiency at its best.

You do not need a ginger beer plant with this recipe and this one is really easy and quick.

Ingredients:

3 tablespoons of chopped fresh ginger

2 lemons sliced ( Most lemons we buy are Lisbon variety and quite tart, but for a milder variety you could try the Meyer lemon).

1 teaspoon of tartaric acid

17oz ( 500g) sugar

8pints (4.5 litres) water

¼ teaspoon yeast ( Error….this should be ¼ oz (7gm) yeast ) Apologies !

Method:

Into a large saucepan place everything EXCEPT the yeast. Bring to the boil and simmer for 5 to 10 minutes.

Remove the lemon and ginger and let cool a little. You don’t want it to be hot but just warm. Now sprinkle the yeast over the top. Cover it with a cloth and leave overnight.

In the morning bottle the mixture leaving a 1.5 inch ( three fingers width) space at the top of each bottle allowing for the gas to expand. Leave the bottles in a warm place for about 3 days. The bottle will tighten as it gets ready.

When the bottles do feel “tight” put them in the fridge as they are ready to drink.

There you have it….no messing around with a plant but still a refreshing drink to make at home.
