Sweet Ginger and Chilli Syrup
by adminThis is sweet syrup to which you may add cold water for a quick refreshing drink or just cold unflavoured soda water. You can keep this on the door of the fridge for weeks. You could also use this as an icecream topping. This can be hot so use the amount of chillies ( you can add up to 20 or use less) that you would be most comfortable with. You could also experiment using this in recipes with chicken and fish.
Ingredients
2 lbs 3 oz (1 kg) sugar
1.75 pints (1litre) water
10 birds eye chillies
1 teaspoon citric acid
1 oz (30 g) bruised ginger
1/2 level teaspoon Cream of Tartar
Method
Boil sugar, water, chillies and ginger about 15 - 20 minutes.
Stir in the citric acid and Cream of Tartar into syrup mixture.
Cool a little, then strain and bottle.
