School Cookbook Ginger Beer - Recipe No. 4

This recipe is an adaption from my old high school cookbook (The Golden Wattle Cookery Book).

When I went to high school girls did “Home Economics” and boys did “Manual Arts”. No ifs or buts, we just did it. These days if they have the subjects you would see both sexes in either classes…its a matter of choice now. I absolutely hated it but strangely enough I am really glad I did it as my business is now based on cooking. My….. how the wheel turns!

Ingredients:

8 oz (250g approx.) bruised ginger

3 1bs ( 1.4 kg) white sugar

2 lemons sliced

9 pints (5 litres) of water

1 teaspoon of yeast

Method:

Put ginger, sliced lemons, water and sugar into a large saucepan and boil for 10 minutes.

Cool a little then strain. Add the yeast and stir well.

Bottle and wait 48 hours.  This is a relatively quick to make ginger beer.

We keep mentioning that it is probably best to use the plastic bottle soda comes in as sometimes ginger beer becomes a bit explosive if in glass bottles.  When you first bottle it the side of the plastic bottle is pliable and as the ginger beer becomes “ready” it becomes quite firm as the gases build inside. It is just a safety precaution to use plastic bottles.
