Old Fashioned Ginger Beer Recipe No. 5

Ingredients:

11 pints ( 6.2 litres) water

Juice of 4 lemons

5 cups sugar

Method:

Place all ingredients into a large saucepan or bucket and stir until the sugar has dissolved. Use a large piece of muslin, cheesecloth or calico to place over the top of the vessel for straining the ginger beer plant using the recipe (Old Fashioned Ginger Beer Plant). The piece of cloth should be big enough to tie up into a bag. Hold the cloth over the saucepan or bucket and tip in the ginger beer plant. Remove the raisins.  Tie a knot in the cloth and let it steep in the lemon sugar mixture overnight.

The next day remove the bag containing the ginger beer plant and do not squeeze leaving the mixture still moist. This mixture may be halved and re-used as per the instructions here.

Bottle the ginger beer and leave for 1 week when it should be ready.

  1. IMHO…most killer Honey Lemonade Recipe: 1/2 gallon warm water, 1/2 cup honey, 1/4 cup sugar, 1/2 cup fresh lemon juice. Just mix it all with your hands (their warmth will disolve the honey and sugar) and pour mixture into a gallon container filled 3/4 with ice. You can even add a slice of fresh ginger for a little extra asian kick.
