Ginger Wine Recipe No.1 - An Old Wartime Recipe

INGREDIENTS:

1 Gallon (4.5 litres) cold water

3.25 lbs (1.5 kg)

1.5 oz (45g) bruised ginger

1 oz (30g) split seeded raisins

2 lemons

2 juicy oranges (not navels, not enough juice)( preferably seville or similar)( slightly tart)

1 sweet orange

1/2 oz (15 g) compressed yeast

METHOD

Thinly peel the oranges and lemons without the white pith ( bitter) and put the skins in with the sugar, ginger, raisins and water and then add the juice from the fruit.

Stand for 3 days, stirring at intervals. Strain and add the yeast to the liquid and pour into a cask or similar and leave it for 1 week. Then bottle and cork.

Allow to mature for at least 3 months.
