Mum’s Basic Ginger Beer

Ingredients for Part 1:

18 oz castor sugar (500g)

1.5 pints of water (one and one half pints)(900ml)

Juice of two lemons (strained)

Method Part 1.

Boil the sugar and water, then cool slightly, then add the lemon juice.

Try to do this in as large a saucepan as possible.

Ingredients Part 2:

Ginger Beer plant that has been  ”growing”  for 10 days.

6 pints of water (3.6 litres)

You will need some muslin or a cloth that can be used to strain the ginger beer plant.

Strain the plant through the cloth into the syrup mixture (Part 1) and add the 6 pints of water (from Part 2).

DO NOT DISCARD the sediment in the cloth. Put aside for now.

Stir well to blend all the ingredients and then bottle in plastic bottles with screw top lids. You can use glass bottles as well.

Old beer and cider bottle are good choices.

Leave a little room in the top for gas expansion. If you have ever made ginger beer in glass bottles you will understand why I am saying this!!!

Store in a cool place and leave for a couple of days. Place in the fridge when you consider they are ready to drink.

TO MAKE MORE GINGER BEER

Halve the sediment from the plant left on the muslin or cloth and place in 2 separate jars.

Add 1/2 pint of water (300ml), 2 level teaspoons of ground ginger and two level teaspoons of castor sugar to each jar.

Start the ten day process again.

HOME MADE SODA POP ABUNDANCE

As you can see you will have many plants on the go if you keep making your home made soda pop.
