Aunty Gracie’s Ginger Beer

Ingredients:

3 cups of sugar dissolved in 4 cups of hot water.

3 large lemons (juiced)

Put these ingredients into a very large saucepan or container.

Method:

Strain the ginger beer plant (we will use the “ginger beer plant A”) through some muslin,

cheese cloth or any cloth that is suitable for straining into the large saucepan.

Add 8 pints (approx. 5 litres) of cold water. Mix well then bottle.

Put 3 sultanas in each bottle and seal.

Check the pressure in the bottle by pressing to see how hard it is. The firmer the bottle becomes the more ready the ginger beer becomes.

Ginger beer is most enjoyed when very cold.
