Ingredients:
2 cups cold water
1 cup fresh lime juice
4 tsp ground ginger ( bottled)
3/4 cup superfine sugar
3 cups seltzer
1 medium lime , sliced (optional)

Method:
Using a blender, mix together water, lime juice, and ginger until well combined.
Using colander lined with cheesecloth, pour mixture through and into a pitcher; throw away pieces that are caught in cheesecloth.
Spoon sugar into liquid and mix until it fully disappears.
When ready to serve, pour seltzer into pitcher. Garnish each glass with lime slices if using. Serve chilled.

I thought that diabetics couldn’t have any sugar but apparently they can have a little as this recipe calls for sugar.
