Adrak Ginger Beer Syrup - Indian Style

Ingredients:

1½ cups of caster sugar

1 pint (600ml) water

I heaped teaspoon of ground (powdered) ginger

Juice of two lemons (at least ½ cup)

Plain water or soda

Method:

Put the water, sugar and ginger into a saucepan and stir together well blending the ginger in, then boil until the sugar has melted and the liquid has slightly reduced and thickened.

Let it cool then add the lemon juice. Put in a jug in the fridge and use with plain water over ice as a syrup or use soda water to make a fizzy drink.

Biting and refreshing.
